1 1/4 cup sugar, divided
1/2 cup butter (room temp)
1.5 cups pastry flour
1 tsp baking soda
1/2 tsp salt
1 tsp cardamom
1 tsp cinnamon
1/2 tsp vanilla
3/4 cup Coconut Cardamom Nut Butter
1/2 cup oats
Preheat oven to 350.
Cream 1 cup sugar + butter in a large mixing bowl.
Beat eggs. Mash bananas. Combine.
Add eggs, banana + vanilla to the creamed sugar + butter.
In a separate bowl, combine flour, baking soda, salt, cardamom + cinnamon.
Add dry ingredients to the wet. Pour half of the batter in a greased loaf pan.
In a separate bowl, combine oats, nut butter and remaining 1/4 cup sugar. Use your hands to work the mixture into a pasty crumble. Pour half of the streusel crumble into the loaf pan.
Top with remaining batter, then swirl with a knife to spread throughout the bread. Top with remaining streusel. (Optional: Cover with aluminum foil so the top doesn't get too crispy.)
Bake at 350 for 60-75 minutes. It's done when the top is firm and golden brown, and a good toothpick test shows no runniness inside!
