No-Bake Lemon Cardamom Donut Holes
Featuring our classic Coconut Cardamom Nut Butter, these NO-BAKE donut holes are the perfect spring treat and require less only a few ingredients! They are also the perfect treat to bring to family gatherings, parties, and all of your Spring celebrations (although if you want to keep them all for yourself...we totally respect that too!)
Ingredients:
For the donut holes:
- ½ cup + 1 tbsp almond flour
- ¼ cup coconut flour
- ½ cup Coconut Cardamom Almond & Cashew Butter
- 2 ½ tbsp maple syrup
- ½ tsp vanilla extract
- 1 tbsp lemon zest
For the glaze & toppings:
- 2 ½ tbsp melted coconut oil
- 4 tbsp lemon juice
- 1 tbsp maple syrup
- ½ tsp vanilla extract
- ⅛ tsp cardamom
- ⅛ tsp sea salt
- 1 tbsp chia seeds
- 1 tbsp lemon zest
Directions:
- In a medium bowl, mix almond flour, coconut flour, nut butter, maple syrup, vanilla extract and lemon zest until dough forms.
- Roll dough into 8 balls and place on a parchment lined sheet pan. Freeze for 15-20 minutes or until set.
- While donut holes are freezing, make the glaze. In a small bowl, whisk melted coconut oil, lemon juice, maple syrup, vanilla extract, cardamom and sea salt until combined.
- Remove donut holes from the freezer and one at a time, use a fork to each dip donut holes into the glaze. Place back on the parchment paper to harden. Repeat until all donut holes are glazed.
- Dip donut holes into glaze again, then pour remaining glaze on donut holes. Sprinkle chia seeds on top of each donut hole.
- Place donut holes back in freezer for 15 minutes or until set. Once hardened, remove from freezer and top each donut hole with lemon zest. Store in fridge or freezer + Enjoy!
