Snowman Sugar Cookies
The only thing melting here are our hearts over these adorable (and delicious) snowman sugar cookies featuring our Salted Eggnog nut butter! These cookies are a delightful holiday must-have, making baking memories a sweet experience for the entire family.
Ingredients:
For the cookies:
- ½ cup vegan butter, softened
- ¼ cup Salted Eggnog nut butter
- ⅔ cup cane sugar
- 1 tsp vanilla extract
- ¼ tsp almond extract
- ¼ cup almond milk
- 1 tbsp cornstarch
- 2 cups all purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 ½ cups powdered sugar
- ½ tsp vanilla extract
- ¼ tsp almond extract
- 2 tbsp almond milk
- Large marshmallows (vegan if preferred)
- UNREAL chocolate gems
- Pretzel Sticks
- Orange Sprinkles
- 1 batch of icing (see above)
Directions:
- Preheat the oven to 350 degrees Fahrenheit.
- Line a baking tray with parchment paper and set aside.
- In a small bowl, combine the coconut flour, ginger, nutmeg, cinnamon, and baking soda. Set aside.
- In a large bowl or standing mixer, cream together the nut butter, coconut sugar, molasses, flax eggs, and vanilla extract, mixing until smooth.
- Add the dry ingredients to the wet ingredients and mix until a dough forms.
- Spoon out 2 tbsp of the dough and form into cookie shapes, placing 2” apart from one another and flattening slightly.
- Bake for 11-12 minutes, or until golden.
- Meanwhile, prepare the icing by adding all of the ingredients to a large bowl or standing mixer and mix until everything is well incorporated.
- Remove the cookies from the oven and let cool for 5-10 minutes before frosting and decorating! Enjoy!
Baking Tip: Feel free to get creative with the decorations! Make Christmas trees instead using a tree cookie-cutter and adding matcha powder or green food coloring to the frosting! Decorate with star sprinkles and pearls for a festive touch!
