Chai Overnight Oats with Spiced Pears

This cozy, make-ahead breakfast is perfect for fall. Simply mix up all the ingredients in a jar, top with sautéed spiced pears, drizzle some of our classic Coconut Cardamom nut butter & enjoy!


Ingredients:

For the overnight oats:

  • ½ cup rolled oats
  • ½ cup milk of choice
  • ½ cup plain Greek yogurt
  • 1 tablespoon chia seeds
  • 2 tablespoon maple syrup
  • ¼ tsp ground cardamom
  • ⅛ tsp ground allspice
  • ⅛ tsp ground nutmeg
  • ½ tsp ground cinnamon
  • ⅛ tsp ground cloves
  • ¼ tsp ground ginger
  • 2 tbsp Coconut Cardamom Nut Butter 

For the spiced pears:

  • 1 tbsp butter or ghee
  • 1 large or 2 small pears, cored and chopped
  • 2 tsp coconut sugar or brown sugar
  • ¼ teaspoon cinnamon
  •  ⅛ tsp cardamom

Directions:

  1. In a jar, add all overnight oat ingredients and mix together until fully combined. Set aside.
  2. In a bowl, add chopped pear, coconut sugar, cinnamon and cardamom. Heat butter in a pan on medium-low heat, then add pear mixture. Sauté for about 10-15 minutes until pears are soft and syrupy. 
  3. Spoon the pear mixture on top of the overnight oats, then leave in the fridge overnight.
  4. The next day, drizzle extra Cardamom nut butter on your oats and enjoy!
