Fudgy Mint Cookie Mug Cake

This fudgy mug cake comes together in less than 5 minutes and features our current limited-edition nut butter: Fudgy Mint Cookie – a collab with @kalememaybe 🥬
Ingredients:
- ¼ cup almond flour
- 2 tbsp cocoa powder
- 1 tbsp Fudgy Mint Cookie nut butter
- 1 tbsp maple syrup
- 1 large egg
- ⅛ tsp peppermint extract
- 1 tbsp semi sweet chocolate chips + more for topping
Directions:
- Combine the nut butter, maple syrup, egg, and peppermint extract in a small bowl, whisking until smooth.
- Add the almond flour and cocoa powder, continuing to mix until just combined. Fold in the chocolate chips.
- Transfer the batter to your preferred mug and microwave for 1-1 ½ minutes.
- Remove the cake from the microwave and let cool for a few minutes before topping with more chocolate chips and an optional scoop of your favorite vanilla ice cream and/or some whipped cream! Enjoy!
