Chocolate Chip Hazelnut Nice Cream Sandwiches

Ice cream sandwiches are a summertime staple. But these aren't your average ice cream sandwiches - they're even better! We used hazelnut butter and coconut flour for the cookie base, and banana nice cream for the filling. Oh, and we added chocolate chips in too - you can never go wrong with a little bit of dark chocolate! They're also packed with protein in both the cookie part and the nice cream part!

Other benefits? This recipe only requires a few simple ingredients and no oven is required. Needless to say, these nice cream sandwiches are the perfect treat to make on a hot summer day!

Chocolate Chip Hazelnut Nice Cream Sandwiches 

Makes 10 nice cream sandwiches 

Cookie dough ingredients:
Nice cream ingredients:
  • 3 ripe bananas (frozen)
  • 1/4 cup almond milk
  • 1 tsp vanilla extract 
  • 1/4 cup vanilla protein powder
Directions:
  1. Stir together the cookie dough ingredients. The dough should be a little crumbly.
  2. Line a 9x4 loaf pan with parchment paper or tinfoil, and press half of the cookie dough (feel free to just eyeball this!) into the pan. Use a spoon to press the dough down firmly.
  3. Next, using a powerful blender or food processor, blend the nice cream ingredients together. If you have trouble blending, add a touch more almond milk.
  4. Spoon the nice cream overtop of the cookie dough layer on your pan. Spread the nice cream across evenly, then freeze for at least 2 hours.
  5. Once the nice cream is frozen, spread the the second half of the cookie dough on top. Again, use a spoon to press the dough firmly into the nice cream.
  6. Pop the bars into the freezer for another hour. Once completely frozen, use the edges of the parchment paper to remove the bars from the pan. Strip off the paper, cut into 10 bars, and enjoy!
