Double Chocolate Covered Mac Nut Cookies
Makes 8 cookies
Ingredients
- 1/2 cup coconut sugar
- 1/4 cup Chocolate Covered Mac Nut butter
- 2-3 Tbsp brewed coffee or dairy-free milk of choice
- 1 Tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1 cup oat flour
- 1/3 cup cacao powder
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup dairy-free chocolate chips
Directions
- Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, whisk together the coconut sugar, nut butter, coffee, coconut oil, and vanilla until smooth and well combined.
- Add the flour, cacao powder, baking soda, baking powder, and salt. Use a spatula to mix until just combined. If the dough feels too dry, add milk or coffee, 1 tablespoon at a time, until it reaches a thick, slightly sticky cookie dough consistency that doesn’t stick to your fingers. Gently fold in the chocolate chips.
- Scoop 2–3 tablespoons of dough per cookie onto the prepared baking sheet, spacing them evenly apart. Gently flatten each scoop into a cookie shape.
- Bake for 10–11 minutes. Let the cookies cool on the baking sheet for at least 15 minutes before transferring or serving, allowing them to set.
