Peanut Butter Protein Bars
These homemade Peanut Butter Protein Bars are the perfect solution for busy mornings, afternoon cravings, and easy meal prep snacks. Made with our brand-new Honey Sea Salt Peanut Butter, they have that classic sweet-and-salty peanut butter flavor you love, with a satisfying boost of protein to help keep you fueled throughout the day.

Peanut Butter Protein Bars
Ingredients
- 1/2 cup Honey Sea Salt Peanut Butter
- 1/2 cup almond milk (or preferred plant-based milk)
- 2 Tbsp maple syrup
- 1 tsp vanilla extract
- 2/3 cup oat flour
- 2 scoops vanilla protein powder (we're using the brand Truvani here)
- 1 tsp cinnamon
- 2/3 cup dark chocolate chips
- 1 tsp coconut oil
Directions
- Line a standard loaf pan with parchment paper and set aside.
- To a large mixing bowl or standing mixer with a paddle attachment, add the peanut butter, almond milk, maple syrup, and vanilla extract. Whisk until smooth.
- Add the oat flour, protein powder, and cinnamon. Mix together until just-combined. (The mixture should have a doughy consistency that is malleable but doesn't stick to your hands.)
- Transfer the dough to the loaf pan and press into an even layer. Place in the freezer while preparing the chocolate coating.
- In a small bowl, combine the chocolate chips and the coconut oil. Microwave in 20 second intervals, stirring in between, until completely melted.
- Remove the protein bars from the freezer and pour the chocolate on top, smoothing so everything is in an even layer.
- Place the protein bars back in the freezer for at least 30 minutes to allow the chocolate to set.
- After the chocolate has set, remove from the freezer and slice into 8 even squares. Enjoy! These are best kept refrigerated for up to one week.
