Holiday Sugar Cookie Truffles
Don’t be fooled: these truffles taste just like sugar cookies! Featuring our limited edition Salted Eggnog nut butter, they’re equivalent to the flavors of the holiday season rolled into a ball, topped with velvety white chocolate and sprinkled with cinnamon sugar!
Ingredients
- 1 cup almond flour
- ½ cup Salted Eggnog nut butter
- ¼ cup maple syrup
- 1 tbsp non-dairy milk
- ½ tsp vanilla extract
- ⅛ tsp salt
- 8 oz white chocolate (we used Enjoy Life White Chocolate Mini Chips to keep this recipe vegan-friendly)
- Cinnamon sugar (optional)
Directions
- Line a small sheet pan or plate with parchment paper.
- Add the almond flour, Salted Eggnog nut butter, maple syrup, milk, vanilla extract and salt to a medium sized bowl.
- Using a handheld mixer or a wooden spoon, mix until “dough” comes together to form a smooth, thick paste, around 1-2 minutes.
- Use your hands to roll “dough” into 1-inch balls, transferring each truffle to the parchment-lined plate or pan when complete.
- Using a double-boiler or microwave, melt the white chocolate. Remove from heat.
- Use tongs to dip the truffles, one by one, to coat in the white chocolate. Once all of the truffles have been dipped, drizzle any extra chocolate over the dipped truffles. Optional: Sprinkle each truffle with a pinch of cinnamon and sugar.
- Transfer to the freezer to chill for 20 minutes, or until the chocolate is hardened. Store in the refrigerator until ready to enjoy!
