Lemon Poppy Seed Parfaits

Imagine layers of creamy, tangy goodness combined with the subtle crunch of poppy seeds—it's a delightful way to start your day or enjoy as a midday snack. These parfaits are not only bursting with summer flavors but also packed with nutrition to keep you feeling great.
Ingredients:
For the crust:
- 1 sleeve graham crackers
For the lemon cheesecake filling:
- 2 cups thick greek yogurt
- ¼ cup Lemon Poppy Seed Cashew Butter
- 2 tablespoons maple syrup
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 2 teaspoons vanilla extract
- Pinch of sea salt
For topping:
- Coconut whip or regular whipped cream
- Extra lemon zest
- Extra graham cracker crumbs
- Fresh berries
Directions:
- Place graham crackers in a food processor and pulse until they are fine crumbs.
- In a medium bowl, add yogurt, nut butter, maple syrup, lemon juice, lemon zest, vanilla extract and sea salt.
- Stir until you have a thick, creamy mixture.
- Assemble your jars! (We used 4 Weck Tulip Jars (7.4 fl oz), but you can use whatever jars you have at home!).
- To each jar, add a layer of graham cracker crumbs to make a base. Reserve some for topping at the end.
- Next, divide the cheesecake mixture amongst them.
- Top with a dollop of coconut whip or regular whipped cream, fresh berries, leftover graham cracker crumbs and extra lemon zest.
- Store in the fridge until you are ready to enjoy!
