This nut butter, crafted with roasted pistachios, a hint of sweetness, and a touch of sea salt, is the star ingredient that takes these cookies to the next level.
Not only are these cookies incredibly delicious, but they also come together in under 30 minutes, making them perfect for satisfying a midweek dessert craving or impressing friends and family with minimal effort!
Ingredients:
- ½ cup Salted Pistachio Cookie nut butter
- 1 large egg
- 3 tbsp maple syrup
- 3 tbsp coconut oil, melted
- 1 tsp vanilla extract
- ½ cup non-dairy chocolate chips
- ½ cup pistachios, chopped
- ¾ cup almond flour
- ¼ tsp baking soda
- 1 tsp baking powder
- Flaky sea salt, for topping
Directions:
- Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
- Combine the nut butter, egg, maple syrup, coconut oil, and vanilla in a large bowl and whisk until smooth.
- Using a spatula, fold in the almond flour, baking powder, baking soda, chocolate chips, and chipped pistachios. Mix together until just combined.
- Take around 2tbsp of the dough in your hand, forming into a ball. Arrange the cookies on the baking tray around 2 inches apart. There is no need to completely flatten the cookies, as they will expand in the oven while baking!
- Place the cookies in the oven and bake for around 9-10 minutes, or until golden.
- Remove the cookies from the oven and let cool for 5-10 minutes before removing from the tray. Enjoy!
