Chewy Chocolate Granola Bars

National Granola Bar Day is here, and what better way to celebrate than with a batch of homemade chewy chocolate granola bars?!

 Made with our bestselling Cinnamon Snickerdoodle Nut Butter, these chewy granola bars feature warm, cozy flavors with just the right amount of sweetness. The recipe is super flexible, so feel free to swap in your favorite nut butter for a personalized twist. Perfect for an on-the-go snack or an afternoon pick-me-up, these granola bars will have you reaching for seconds (and thirds!)!

Ingredients

  • ½ cup Cinnamon Snickerdoodle Nut Butter
  • 2 tbsp coconut oil, melted
  • ¼ cup honey 
  • 1 tsp vanilla extract
  • 1 tsp cinnamon 
  • ¼ cup flaxmeal 
  • 2 tbsp hemp seeds
  • ¾  cup rolled oats 
  • ⅓ cup chopped almonds
  • ¼ cup shredded coconut 

For topping: 

  • 2 tbsp roasted almonds, chopped
  • ¼ cup dark chocolate chips 
  • 1 tsp coconut oil 


Directions

  1. Prepare an 8x4 inch loaf pan with parchment paper and set aside.
  2. Combine the nut butter, melted coconut oil, honey, vanilla, and cinnamon to a large mixing bowl, whisking until smooth. 
  3. Add in the flaxmeal, hemp seeds, and oats, stirring until just combined. 
  4. Fold in the almonds, and shredded coconut, mixing until everything is evenly coated.
  5. Pour the granola bar mixture into the loaf pan and press firmly into an even layer. Add the remaining 2 tbsp of roasted almonds to the top of the bars, pressing them lightly into the bars to make sure they stay on the top. 
  6. Place the bars in the freezer and allow to set for at least 30 minutes.
  7. Prepare the chocolate topping by combining the chocolate and coconut oil in a small bowl and heating in the microwave in 30 second increments until completely melted. 
  8. Remove the bars from the freezer and drizzle with the chocolate topping on top before placing back in the freezer for an additional 20 minutes to allow the chocolate to set. 
  9. Remove the bars from the freezer and slice into 8 equal-sized pieces and enjoy! These bars can last up to a week when stored in an airtight container in the fridge or up to 1 month in the freezer!
