Cinnamon Churro Crunch Cereal
We’re bringing you a recipe that’s churro-licious and an ode to the classic cinnamon toast crunch—but better for you! Made with our limited-edition Sweet Cinnamon Churro nut butter, this cereal is crunchy, sweet, and perfect for breakfast or snacking straight from the jar!
Ingredients
For the dough:
- 1 ¼ cup brown rice flour
- ¼ cup Sweet Cinnamon Churro nut butter
- ¼ tsp cinnamon
- ¼ tsp salt
- 2 tbsp maple syrup
- 2-3 tbsp cold water + more as needed
For the cinnamon sugar coating:
- 2 tbsp melted butter, cooled
- 3 tbsp coconut sugar
- 1 tsp ground cinnamon
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- To a food processor or mixing bowl with paddle attachment, add in the flour, salt, nut butter, and cinnamon, pulsing/mixing until the mixture takes on a crumbly texture.
- Add the maple syrup and cold water, continuing to mix until the mixture forms a doughy consistency. If needed, add more water in tbsp increments as needed until the dough consistency is achieved.
- Cut the dough in half, setting the other half aside for later.
- Roll out the dough on a lightly floured sheet of parchment paper. Make sure to roll the dough as thin as possible, as this will help make the cereal crunchy! *Tip: You can use a pizza cutter to cut away any excess dough if you would like to make the cereal pieces perfect squares!*
- Brush a light layer of melted butter on top of the dough, then sprinkle a generous amount of the coconut sugar/cinnamon mixture onto the dough, patting lightly to ensure the coating sticks to the cereal.
- Using a pizza cutter or pastry knife, slice the dough into tiny squares, around ½ inch in length. No need to separate the squares as they will naturally separate once baked!
- Repeat steps 5-7 with the other half of the dough.
- Bake in the oven for 10 minutes, or until golden. Note that they will still be soft but will get crispier once left to cool on the baking tray.
- Remove from the oven and let cool for up to 20 minutes before enjoying or storing in an airtight container at room temperature. Enjoy!
