Chickpea Cookie Dough with Waffle Cone Nut Butter

Who knew making a healthy and delicious edible cookie dough would involve a can of chickpeas?! This treat is perfect for snacking on the go, pairing on top of yogurt bowls, stuffing in dates, and yes, even turning into simple no-bake chocolate chip cookies! 

Featuring our limited edition Waffle Cone Nut Butter, this cookie dough takes on a whole new twist with the incorporation of fresh gluten-free waffle cone pieces!

Ingredients:

  • 1 14oz can chickpeas, drained and rinsed
  • 1/4 cup Waffle Cone Nut Butter
  • 3 tbsp maple syrup 
  • 1 tbsp coconut sugar
  • 2 tsp vanilla extract
  • 1/4 cup oat flour
  • Chocolate chips 

Directions:

  1. Add the chickpeas, nut butter, maple syrup, coconut sugar, vanilla, and oat flour to a high-speed blender or food processor. Blend until creamy and a smooth texture is achieved. 
  2. Fold in the chocolate chips using a spatula. Store leftovers in an air-tight container or roll into bite size pieces for a quick on-the-go snack! Enjoy!
