Chickpea Cookie Dough with Waffle Cone Nut Butter
Who knew making a healthy and delicious edible cookie dough would involve a can of chickpeas?! This treat is perfect for snacking on the go, pairing on top of yogurt bowls, stuffing in dates, and yes, even turning into simple no-bake chocolate chip cookies!

Ingredients:
- 1 14oz can chickpeas, drained and rinsed
- 1/4 cup Waffle Cone Nut Butter
- 3 tbsp maple syrup
- 1 tbsp coconut sugar
- 2 tsp vanilla extract
- 1/4 cup oat flour
- Chocolate chips
Directions:
- Add the chickpeas, nut butter, maple syrup, coconut sugar, vanilla, and oat flour to a high-speed blender or food processor. Blend until creamy and a smooth texture is achieved.
- Fold in the chocolate chips using a spatula. Store leftovers in an air-tight container or roll into bite size pieces for a quick on-the-go snack! Enjoy!
