With just the right balance of sweetness and nuttiness, they’re perfect for busy mornings when you need a grab-and-go breakfast or as a satisfying treat to keep you going during those mid-afternoon slumps. Wholesome, indulgent, and hassle-free, these bites are about to become your new snack-time obsession!

Makes around 12 energy bites

Ingredients: 

  • ¾ cup old-fashioned oats
  • ¼ cup quinoa flakes
  • ½ cup Salted Pistachio Cookie nut butter
  • ¼ cup ground flaxseed
  • ½ cup shredded coconut 
  • ½ cup non-dairy chocolate chips 
  • ⅓ cup agave
  • 2 tbsp chia seeds

Directions: 

  1. Add all of the ingredients to a high speed blender or food processor.
  2. Pulse the mixture until just-combined. Alternatively, you can also stir all of the ingredients together in a large bowl by hand until well combined. 
  3. Transfer the mixture to a bowl and chill in the fridge for at least 1 hour. 
  4. Remove the mixture from the fridge and spoon out between 1-2 tbsp of the mixture, rolling into balls. 
  5. These can be enjoyed immediately or stored in an airtight container in the fridge for up to 1 week to enjoy as a quick snack or afternoon pick-me-up during the week!
