Ingredients

  • ⅓ cup Ground Up PDX Cinnamon Snickerdoodle Nut butter
  • ⅓ cup maple syrup 
  • 1 tsp vanilla extract
  • 1 tsp cinnamon 
  • 2 cups rolled oats
  • ½ cup chopped walnuts
  • ½ cup chopped pecans
  • ⅓ cup pumpkin seeds

Directions

  1. Preheat the oven to 325 degrees Fahrenheit. Line a baking tray with parchment paper and set aside.
  2. To a large bowl, whisk together the nut butter, maple syrup and vanilla extract until smooth. Add in the remainder of the ingredients, mixing until just combined.
  3. Transfer the granola mixture to the baking tray and flatten into an even layer.
  4. Bake in the over for 20-25 minutes or until golden. 
  5. Remove from the oven and let cool for 10-15 minutes before serving. Leftovers can be stored in an airtight container at room temperature for up to 1 week.
