Ingredients
- ⅓ cup Ground Up PDX Cinnamon Snickerdoodle Nut butter
- ⅓ cup maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 2 cups rolled oats
- ½ cup chopped walnuts
- ½ cup chopped pecans
- ⅓ cup pumpkin seeds
Directions
- Preheat the oven to 325 degrees Fahrenheit. Line a baking tray with parchment paper and set aside.
- To a large bowl, whisk together the nut butter, maple syrup and vanilla extract until smooth. Add in the remainder of the ingredients, mixing until just combined.
- Transfer the granola mixture to the baking tray and flatten into an even layer.
- Bake in the over for 20-25 minutes or until golden.
- Remove from the oven and let cool for 10-15 minutes before serving. Leftovers can be stored in an airtight container at room temperature for up to 1 week.
