Healthy Cookie Dough Protein Bars

These Healthy Cookie Dough Protein Bars feature our classic Cinnamon Snickerdoodle nut butter. Plus, they're perfect for meal prep, satisfying post-dinner sweet cravings, or enjoying a hassle-free, on-the-go snack! 

Did we mention they're also only 7 ingredients?!

Ingredients

  • ½ cup + 1 tbsp Cinnamon Snickerdoodle nut butter, plus extra for topping
  • ½ tbsp maple syrup 
  • 2 tsp vanilla extract
  • ½ cup plant based unsweetened or vanilla protein powder
  • ¼ cup almond flour
  • 1 tbsp ground flaxseed 
  • ⅓ cup mini chocolate chips, plus extra for topping
  • Optional: Flaky sea salt for topping

Directions

  1. Add the nut butter, maple syrup, and vanilla extract to a large bowl, whisking together until smooth.
  2. Add in the remainder of the ingredients and mix until well-combined.
  3. Line a loaf pan with parchment paper and add the cookie dough mixture. Spread and flatten with hands.
  4. If desired, drizzle extra nut butter on top, then sprinkle with extra chocolate chips and flaky sea salt.
  5. Place dough in the freezer to harden. Once bars are firm, take them out and chop into bars (We recommend 4 large ones, you can keep them big or chop those in half for smaller bars). 
  6. Enjoy! Leftovers can be stored in the freezer. When you’re ready to enjoy a bar, let it thaw for 10-15 minutes before eating.
