Healthy Cookie Dough Protein Bars
These Healthy Cookie Dough Protein Bars feature our classic Cinnamon Snickerdoodle nut butter. Plus, they're perfect for meal prep, satisfying post-dinner sweet cravings, or enjoying a hassle-free, on-the-go snack!

Ingredients
- ½ cup + 1 tbsp Cinnamon Snickerdoodle nut butter, plus extra for topping
- 3 ½ tbsp maple syrup
- 2 tsp vanilla extract
- ½ cup plant based unsweetened or vanilla protein powder
- ¼ cup almond flour
- 1 tbsp ground flaxseed
- ⅓ cup mini chocolate chips, plus extra for topping
- Optional: Flaky sea salt for topping
Directions
- Add the nut butter, maple syrup, and vanilla extract to a large bowl, whisking together until smooth.
- Add in the remainder of the ingredients and mix until well-combined.
- Line a loaf pan with parchment paper and add the cookie dough mixture. Spread and flatten with hands.
- If desired, drizzle extra nut butter on top, then sprinkle with extra chocolate chips and flaky sea salt.
- Place dough in the freezer to harden. Once bars are firm, take them out and chop into bars (We recommend 4 large ones, you can keep them big or chop those in half for smaller bars).
- Enjoy! Leftovers can be stored in the freezer. When you’re ready to enjoy a bar, let it thaw for 10-15 minutes before eating.
