Banana Bread Cookie Dough Bites
Meet your new favorite no-bake treat. These Banana Bread Cookie Dough Bites are made with our latest collaboration with Lyana of Healthy Mood SF: Almond Butter Banana Bread Nut Butter—and they’re everything you love about a warm, decadent banana muffin, no oven required.
Packed with protein and cozy banana bread vibes, they’re the perfect sweet treat or afternoon pick-me-up to get you through the week!
Ingredients:
- 1 ½ cups medjool dates, pitted
- ⅔-1 cup oat flour
- 1 scoop protein powder
- 2 Tbsp Almond Butter Banana Bread Nut Butter
- 1 tsp vanilla
- Pinch of sea salt
- Dash of cinnamon (optional)
- ¾ cup chocolate chips
- 1 tsp coconut oil
- Maldon salt, for topping
Directions:
- Add the dates, oat flour, protein powder, nut butter, vanilla, salt, and cinnamon to a high-speed food processor.
- Pulse everything together until a sticky dough forms.
- Spoon 1-2 Tbsp of dough and shape into a ball. Place on a sheet of parchment and repeat with the remaining dough.
- Place the tray with the cookie dough bites in the freezer.
- While the dough is chilling, melt the chocolate by combining the chocolate and coconut oil in a microwave safe bowl and heating in the microwave in 30 second increments. Repeat this until the chocolate is completely melted.
- Remove the cookie dough bites from the freezer and dip in the melted chocolate, placing each ball back onto the baking tray after doing so.
- Place the tray with the cookie dough bites back in the freezer to allow the chocolate to set.
- Remove the cookie dough bites from the freezer 10 minutes before serving and sprinkle with some Maldon salt. Enjoy!
