Ingredients:

  • 1 ½  cups medjool dates, pitted
  • ⅔-1 cup oat flour
  • 1 scoop protein powder
  • 2 Tbsp Almond Butter Banana Bread Nut Butter
  • 1 tsp vanilla
  • Pinch of sea salt
  • Dash of cinnamon (optional)
  • ¾  cup chocolate chips
  • 1 tsp coconut oil
  • Maldon salt, for topping

Directions:

  1. Add the dates, oat flour, protein powder, nut butter, vanilla, salt, and cinnamon to a high-speed food processor.
  2. Pulse everything together until a sticky dough forms.
  3. Spoon 1-2 Tbsp of dough and shape into a ball. Place on a sheet of parchment and repeat with the remaining dough.
  4. Place the tray with the cookie dough bites in the freezer.
  5. While the dough is chilling, melt the chocolate by combining the chocolate and coconut oil in a microwave safe bowl and heating in the microwave in 30 second increments. Repeat this until the chocolate is completely melted.
  6. Remove the cookie dough bites from the freezer and dip in the melted chocolate, placing each ball back onto the baking tray after doing so.
  7. Place the tray with the cookie dough bites back in the freezer to allow the chocolate to set.
  8. Remove the cookie dough bites from the freezer 10 minutes before serving and sprinkle with some Maldon salt. Enjoy!
