Piña Colada Nut Butter, 4 Ways
We are so excited to introduce you to our July seasonal: Piña Colada Cashew + Coconut Butter! This dreamy flavor is a collaboration with The Underbelly Yoga + Jessamyn Stanley. The Underbelly Team wanted to share the delicious + unique ways they are enjoying the nut butter!
A Date Without the Small Talk
Recipe from Chaz, The Underbelly's Social Media Associate
Ingredients:
- Medjool dates (the more the merrier)
- Ground Up x UB Piña Colada Cashew + Coconut Butter
- Shredded coconut for garnish
Directions:
- Chill your dates! This step is optional, but I find them easiest to work with when chilled.
- Cut your date halfway through to remove the pit & make room for your nut butter.
- Scoop about a teaspoon of nut butter into each date cavity.
- Top with shredded coconut and chill again! They're ready whenever you are.
Piña Colada Cookies
Recipe by Melody, The Underbelly's Social Media Manager
(can be eaten raw by omitting egg and baking powder & baking soda)
Ingredients:
- 5 T of Ground Up x UB Piña Colada Cashew + Coconut Butter
- 1 egg
- 1 tsp vanilla
- 1 tsp butter emulsion (extract) -omit if you don’t have
- 1/8 tsp salt (I used diamond for all baking and prefer it)
- 1/8 baking soda & 1/8 baking powder
- 1/4 cup dark brown sugar
- 1 cup almond flour but you can use your flour of choice
- 1/4 cup white (or dark) chocolate chips
- 2 T shredded coconut
Directions:
- Preheat oven to 350. In a large bowl, beat egg, add ingredients in by order above and mix. Gently fold in white chocolate and coconut. Use a spoon to scoop dough, roll and place on not stick mat and oven tray, finally flatten a bit with your fingers and place in the oven.
- Bake at 350 for 7-10 minutes. Makes 12 cookies.
Treat Me Nice Cream

Ingredients:
- 3 bananas, cut up and frozen
- 1/2 cup vanilla unsweetened almond milk (or sweetened, if you fancy)
- 1 teaspoon cocoa powder
- 1 teaspoon
- Ground Up x UB Piña Colada Cashew + Coconut Butter
- Stevia to taste (if desired)
Directions:
- Cut up three bananas and freeze at least 4-5 hours
- Grab your blender. Add in the bananas and almond milk
- As you blend, add in the cocoa powder and Ground Up nut butter
- Scoop out into a bowl and add any toppings you may be craving (fruit is great, but oats/granola or chocolate also works). Enjoy!
Piña Colada + Banana Toast

Spread Piña Colada Cashew + Coconut Butter on your favorite toast and add sliced banana. Simple and delicious!
